Baked Southwest Egg Rolls Recipe - Six Sisters' Stuff

• 2 Tablespoon green onion (minced)
• 2 Tablespoon red bell pepper (minced)
• ⅓ cup frozen corn
• ¼ cup canned black beans ( (drained and rinsed))
• 2 Tablespoon frozen spinach ( (thawed and drained))
• 2 Tablespoon jalapeno peppers ((diced - remove seeds for less heat))
• 1 boneless, skinless chicken breasts ((cooked and diced))
• ½ teaspoon ground cumin
• ½ teaspoon chili powder
• ½ teaspoon salt
• pinch cayenne pepper
• ¾ cup shredded Monterey Jack cheese
• 6 egg roll wrappers
