• 1 cup finely chopped sweet onion
• 2 garlic cloves, minced
• 2 teaspoons dried thyme
• 1 14 ounce can beef broth
• Potatoes
• 1/4 ¼ cup unsalted butter
• 1/2 ½ teaspoon dried thyme
• 2 pounds russet potatoes (4 large) peeled and cut into 1 inch pieces
• 1/4 ¼ cup cream
• 1/4 ¼ teaspoon salt
• 1/4 ¼ teaspoon pepper
• 1 cup shredded Gruyere Cheese
