• 3 tbsp balsamic vinegar
• 4 sprigs sage
• 1 bay leaf
• 1 sprig rosemary
• 2 quarts stock (vegetable, chicken, or beef)
• 1/2 cup heavy cream

• freshly cracked black pepper
• 1/2 pound ciabatta bread, cubed
• 2 tsp chopped rosemary

• 1/2 pound shiitake mushrooms, trimmed
