Ingredients

  • 2 teaspoons coriander seeds
  • grated rind of 1 lemon
  • 2 tablespoons ghee
  • 2 teaspoons garam masala
  • 3 garlic cloves, roughly chopped
  • 1 onion, roughly chopped
  • onion rings
  • lemon wedges
  • ½ teaspoon tandoori food colouring (optional)
  • 1 teaspoon cumin seeds
  • 1.5 kg (3 lb 5 oz) chicken or skinless chicken thighs and drumsticks
  • 3 tablespoons lemon juice
  • 250 ml (1 cup) thick plain yoghurt
  • 2 tablespoons clear vinegar
  • 5 cm (2 inch) piece of ginger, roughly chopped
  • 1 teaspoon paprika
