• 2 tbsp olive oil
• 8 Harvey Beef Classic Sausages
• 2 garlic cloves
• 1 green capsicum, diced
• 1 onion, finely diced
• 1 bunch coriander stalks, finely diced (reserve leaves)
• 400g tin diced tomatoes
• 250ml chicken bone broth (or chicken stock), warmed
• handful cherry tomatoes, optional
• 4 fresh eggs
• 1 bunch coriander leaves, chopped
• lemon zest & tomato paste (optional)
• Spice mix : 1 tsp smoked paprika
• 1 tsp chipotle chilli
• 1 tsp ground cumin
• 2 tsp ground coriander
• 1 whole bay leaf
• 1 tsp brown sugar
• salt & pepper, to taste
