Ingredients

  • 4 chicken marylands
  • 60ml extra virgin olive oil
  • 1 brown onion, finely sliced
  • 1 large leek (white part) finely sliced
  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds
  • 500ml chicken bone broth (or chicken stock)
  • 2 cups hot water
  • 2 carrots, halved and chopped
  • 400g canned chickpeas, drained
  • ½ cup dried apricots (sulphur free)
  • ½ teaspoon ground turmeric
  • 1 large pinch of saffron
  • 5 cloves garlic, minced
  • 1 stick of cinnamon, broken in half
  • 10g lemon rind
  • 1 small hot red chilli, seeds removed and finely sliced into strips
  • ½ cup whole green olives
  • 10g coriander, finely chopped
  • 2 tablespoons lemon juice
  • Sea salt
  • Pepper
  • Couscous
  • Natural yogurt
  • Fresh mint
