• 1lb of Italian Sausage, cut into coins
• 1 Small Onion, roughly chopped
• 2 Carrots, peeled and roughly chopped
• 2 Stalks of Celery, roughly chopped
• 4 Cloves of Garlic, peeled
• 2 cups of Marinara Sauce or Crushed Tomatoes
• 8 cups of Beef Stock
• 1 Tbsp of Italian Seasoning
• 8 oz of Mini Ravioli
• 2" Piece of Parmesan Rind
• Fresh Basil
• Salt and Pepper to taste
