• 2 tablespoons olive oil
• 3/4 cup chopped onion
• 3 large zucchini, stemmed and cut into 1-inch cubes
• 1 teaspoon salt
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon nutmeg
• 1/2 teaspoon hot or smoked paprika (optional)
• 1 tablespoon flour
• 1/2 cup milk, heated
• 1/2 cup mayonnaise
• 1/2 cup crushed butter crackers
• 1/3 cup grated Gruyere cheese
