- Finely grated zest and juice of 1 lemon

- Small bunch fresh flatleaf parsley, chopped
- 1 tsp dried mint
- Pinch chilli flakes
- Pinch of salt and pepper
- 7 filo pastry sheets
- 125g unsalted butter, melted
