  • 1 large onion, finely sliced

  • 5 thyme sprigs
  • 1½ tbsp tomato purée
  • 2 tsp caster sugar
  • 750ml pale ale (we used Old Speckled Hen)
  • 1 beef stock cube, crumbled
  • 500g chestnut mushrooms, thickly sliced
  • 1½ tbsp grainy mustard
