Thansksgiving Pumpkin Pie – Papa Vince

Ingredients

• 2 cups (480 ml) pumpkin puree
• 1 1/2 cups (350 ml) heavy cream
• 1/2 cup (90 g) fine brown sugar
• 1/3 cup (65 g) white sugar
• 2.5 g (1/2 teaspoon) fine salt
• 2 whole fresh eggs plus the yolk of another egg
• 2 teaspoons (10 g) ground cinnamon
• 1 teaspoon (5 g) ground ginger
• 1 g (1/4 teaspoon) ground nutmeg
• 1 g (1/4 teaspoon) ground cloves
• 1/2 teaspoon (2.5 g) lemon zest
• A good crust (puff pastry or homemade)
