Ingredients

• 2 Ripe avocados
• 200g Cream cheese (Emborg)
• Zest and juice 1 lime
• 1 tbsp Fresh coriander leaves
• Drizzle olive oil
• Salt and pepper to taste
• 2 Red peppers, deseeded, sliced and grilled
• 12 Slices frozen grilled aubergine (Coccodi)
• 2 Onions, quartered and grilled
• 1 Handful rocket leaves
• 150g Greek cheese, crumbled (Emborg)
• 2 tbsp Chopped pistachios
• Good drizzle olive oil
• 4 Soft flour tortilla wraps (Santa Maria)
• Extra fresh coriander leaves for serving
