Coconut Carrot Pineapple Cake

Ingredients

• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1 teaspoon ground cinnamon
• ¼ teaspoon ginger
• ½ teaspoon salt
• 1 cup vegetable oil
• 1 cup granulated sugar
• ½ cup brown sugar
• 4 large eggs
• 2 cups; 4 medium carrots, peeled and grated
• 1 cup pineapple crushed
• 1 cup shredded coconut
• 8 oz cream cheese, softened
• ½ cup unsalted butter, softened
• 4 cups powdered sugar
• 1 teaspoon vanilla extract
• 1 ½ cup teaspoon coconut extract
• ¼ teaspoon salt
• 1 tbs milk
• Optional : 1/2 cup toasted nuts and coconut for garnish
