- 1 large or 2 medium onions, diced
- 4 bell peppers, diced
- 1 lb. ground turkey
- Salt and pepper
- 1 jar of salsa (15 oz.)
- 19 oz. red enchilada sauce
- 14-15 oz. diced tomatoes
- 2 c. broth
- 3 Tbsp. taco seasoning
- 1 1/2 Tbsp. chili powder
- Zest of 2 limes
- Juice of 2 limes
- 3/4 c. cornmeal
- 1-2 c. frozen corn
- 1-2 handfuls of cilantro, chopped
