Charcoal Battered Halibut - James Martin Chef
Galton Blackiston's recipe for Charcoal Battered Halibut is on the menu in his restaurant and is sometimes called the 'burnt offering'!
Ingredients
- 4x 200g Halibut fillets, skinned
- 150g gluten free flour
- 25g charcoal powder
- 1 tsp lime juice
- 400ml Sparkling water to combine
- 1 red chilli, deseeded and finely chopped
- 1 small bunch coriander, finely chopped
- Salt
- Pepper
- 75g seasoned gluten free flour
- 3 eggs yolk
- 1 tsp Dijon mustard
- 1 tbsp white wine vinegar
- 1 lemon zest and juice
- 400ml veg oil
- Half shallot, finely chopped
- 1 small bunch mint, finely chopped
- 1 small bunch parsley, finely chopped
- 1 small bunch chives, finely chopped
- 25g gerkins, finely chopped
- 2 tbsp baby capers
- 4 Maris piper potato, peeled
- 1 red chilli, finely shopped
