• ½ cup Capo Zafferono Rosso Appassimento (or other dry red wine) or orange juice
• ½ cup Dutch-processed cocoa powder
• ½ tsp ground cinnamon
• ¼ tsp fine sea salt
• 1 cup granulated sugar
• 3 large eggs, at room temperature
• 2 tsp vanilla extract
• 1 cup plus 2 Tbsp all-purpose flour
• ½ tsp baking soda
• ½ cup heavy cream or whipped coconut cream
• 1 Tbsp powdered sugar
• ½ tsp ground cardamom
• ½ cup lightly salted, chopped roasted pistachios
• ½ tsp flaky sea salt
