Traybake Berry Pancakes

Ingredients

• 1/2 tbsp butter, for greasing
• 300g self-raising flour
• 1 tsp baking powder
• 2 large eggs, separated
• 2 tsp vanilla extract
• 2 tsp ground cinnamon
• 350ml buttermilk
• 3 tbsp milk
• 3 tbsp caster sugar
• a few of each strawberries, raspberries and blueberries
• 50ml maple syrup
• 1 tsp cinnamon
• 50ml double cream
• 100g mascarpone
• 1 tsp vanilla extract
• 1 tbsp icing sugar
• 2 tbsp hazel nuts, roasted and crushed
