Creamy Roasted Red Pepper Penne

Ingredients

• 1 medium onion, finely chopped
• 2 cups of penne pasta
• 1/2 teaspoon of freshly cracked black pepper
• 3 tablespoons of fresh basil, chopped
• 1/4 cup of fresh cream
• 1 cup of vegetable stock
• 4 cloves of garlic, roasted and minced
• 1 teaspoon of salt
• 1 jar of roasted red peppers (about 12 ounces)
• 1/4 cup of crumbled goat cheese
• 2 tablespoons of butter
