Ingredients

• 1/2 head of red cabbage (finely shaved)
• 2 apples (Granny Smith or other tart variety) (Cut into matchsticks)
• 1/2 red onion (thinly sliced)
• 1 cup loosely packed cilantro (roughly chopped)
• 1/2 cup loosely packed mint leaves (roughly chopped)
• 1 jalapeño (seeded, finely chopped)
• 1 1/2 limes (zested and juiced)
• 1/4 cup mayonnaise
