Black Lentil Bolognese Recipe

Ingredients

• 3 tbs olive oil
• 1 large onion, diced
• 2 cups carrots, diced
• 2 cups celery, diced
• 1 tbs minced garlic
• 1 tbs tomato paste
• 1 ½ tsp salt
• ½ tsp pepper
• ¼ tsp chili flakes (optional)
• 1 tbs fresh thyme or oregano
• ¼ cup red wine or stock
• 1 ¼ cup Clear Creek Black Lentils
• 3 medium tomatoes, diced with juices
• 3 ½ cups vegetable stock
• ¾ cups crushed toasted walnuts
• 2 tsp balsamic vinegar
