• 1 cup chopped onion
• 1 cup chopped celery
• 1 ½ cup chopped delicata squash
• ½ tsp. dried thyme
• ¼ tsp. dried sage
• 1 tsp. salt
• 8 oz. diced pancetta
• ½ cup chopped dried figs
• 2 cups chicken stock
