Ingredients

• 1 cup minced onion
• ½ cup dry red wine
• ¼ cup each fresh lemon juice and olive oil
• 1 Tbsp. minced fresh oregano
• 2 tsp. minced fresh rosemary
• 2 tsp. ground cumin
• Salt and black pepper
• 1 boneless leg of lamb, trimmed and cut into 1½-inch pieces (2 lb.)
• 1 each red bell pepper and red onion, cut into 1½-inch pieces
