  • 1 large onion, coarsely chopped
  • ½ teaspoon black peppercorns, coarsely crushed
  • 2½ pounds very ripe, juicy tomatoes, cut into quarters or large wedges
  • 4 whole cloves
  • 3 large sprigs fresh thyme or ½ teaspoon dried, crumbled
  • ¼ cup vegetable oil
  • 2 large sprigs fresh Mediterranean oregano or ½ teaspoon dried Mexican oregano, crumbled
