Karen's Sensational Summer Corn Recipes - A Zest for Life

Ingredients

• 3 medium zucchini and summer squash (your choice!)
• 2 ears fresh corn
• 1 1/2 teaspoon grapeseed oil (divided, or expeller pressed safflower oil)
• 1/8 teaspoon sea salt (or to taste )
• 1 1/2 tablespoons fresh parsley (cleaned, dried and coarsely chopped)
• 2 tablespoons unsalted butter (room temperature, I use organic)
• 1 1/2 teaspoons chipotle in adobe (finely chopped)
• 1 1/2 teaspoons pure maple syrup
