Ingredients

  • 1 tbsp coconut oil
  • 1 tbsp butter
  • 1 large sweet onion, roughly chopped
  • 1 large yellow bell pepper, roughly chopped
  • 3 medium cloves garlic, minced
  • 2 tbsp finely grated fresh ginger
  • 2 tbsps finely chopped lemongrass or lemongrass paste
  • 1 tbsp Thai red curry paste, more to taste
  • 5 cups low-sodium chicken broth, maybe more
  • 2 (13.5 ounce) cans coconut milk (regular or light)
  • 2-3 medium potatoes, peeled and roughly chopped (around 14 ounces, before peeling)
  • 2 tbsp granulated sugar
  • 2 tbsp fish sauce
  • 1 & 1/4 tsp kosher salt, more to taste
  • 3-4 medium boneless skinless chicken breasts (1¼-1 ½ pounds), cut in half lengthwise and thinly sliced about ⅛-inch thick
  • 1 egg white (from 1 large egg)
  • 2 tsp corn starch
  • 2 tsp rice vinegar
  • 1 tsp extra virgin olive oil
  • lime wedges
  • fresh cilantro, basil, Thai basil and/or mint leaves
  • sugar snap peas, optional (see Chef’s Note below)
