RecipeTin Eats Mexican fish stew with chipotles en adobo: One-pot midweek dinner ideas
The big-flavoured sauce means you can get away with using inexpensive fish in this chunky, satisfying stew.
Ingredients
- 2 tbsp extra virgin olive oil
- 1 onion, finely diced
- 2 garlic cloves, finely chopped
- 2 tsp dried oregano
- 100g can of chipotles in adobo sauce (see note)
- 400g can crushed tomato
- 1 litre salt-reduced vegetable stock
- 1 tsp cooking salt
- 2 potatoes (300g each), peeled and cut into 1.2cm cubes
- 6 corn cobbettes (thaw if frozen)
- 400g can black beans, drained
- 2 x 300g snapper, barramundi or basa fillets, cut into 5cm pieces
- ¼ cup roughly chopped coriander leaves, plus extra to serve
- 1 tbsp lime juice (plus extra wedges to serve)
