- 1 red onion, sliced
- 1 clove of garlic, thickly sliced
- 3 sprigs of thyme (leaves only)
- 2 tbsp olive oil, plus a little extra
- 250 g curly kale or cavolo nero
- 4 tbsp crème fraîche
- 1 tsp English mustard
- 20 g Parmesan or another hard, grainy cheese, finely grated
