Beet and Sugar Snap Salad

Ingredients

• ½ small red onion, peeled, halved and thinly sliced
• 3 tablespoons rice vinegar
• 1 teaspoon ground coriander
• 2 teaspoons maple syrup
• 1 teaspoon salt
• ½ teaspoon freshly ground black pepper
• 3 tablespoons extra-virgin olive oil
• 8 whole small young beets, any color, scrubbed clean
• 1 pint sugar snap peas, strings removed
