Ingredients

• 1/2 package ( 10 oz .) frozen chopped spinach, thawed and squeezed dry
• 1/2 cup dry bread or Panko crumbs ( I like Italian seasoned or Roasted Garlic best )
• 1/2 cup white or yellow onion, finely chopped
• 1 egg, lightly beaten
• 1 tsp. dried oregano
• 2 TB Feta cheese, crumbled
• 1 tsp. garlic powder
• 1 tsp. Kosher salt
• 1 lb. ground lamb or extra-lean ground beef
• 1 tsp. garlic, crushed or minced
• 1 tsp. white wine vinegar
• 3/4 cup plain Greek yogurt ( Fage brand is exactly 6 o z)
• 2 tsp. lemon juice
• 1 tsp. extra-virgin olive oil
• 1/2 tsp. Kosher salt
• 1/2 tsp. black pepper
• About 4” of a cucumber ( medium thick ~ I didn't use a hothouse, and didn't peel it )
