Lemon Madeira cake - Bake with Amy
This Lemon Madeira is a classic British sponge cake with lovely citrusy notes. Topped with icing and zest but can be eaten without!
Ingredients
- 250 g unsalted butter (at room temperature)
- 200 g caster sugar
- 200 g eggs, at room temperature (4 x 55gr eggs)
- 300 g plain flour
- 10 g baking powder
- 2 lemons, juice and zest
- 1 ½ cups icing sugar
- 1 ½ tbsp lemon juice
- 1 lemon zest (optional)
