Ingredients

  • 1 bottle of red wine
  • 350 – 400g granulated sugar
  • 8 ripe eating pears (e.g. William or Comice)
  • 1 vanilla pod, split lengthways
  • 1 cinnamon stick
  • 4 – 5 cloves
  • 100 g butter
  • 150g pudding rice
  • 5 litres whole milk (i.e. not semi-skimmed)
  • 225 g double cream
  • ½ a vanilla pod
  • Pinch of salt
  • 125 g granulated sugar
