Ingredients

• 2 medium sweet potatoes, peeled and cut into chunks
• 2 tbsp olive oil
• 2 tsp Paprika
• 2 tsp Garlic Granules
• 200 g (7 oz) chorizo, sliced
• 275 g (10 oz) oyster or flat field mushrooms, sliced
• zest and juice of 1 lemon
• 4 spring onions, finely sliced
• 1 tbsp Parsley Flat Leaf
• 1 bag rocket leaves
• ½ tsp sugar
• 2 tbsp extra virgin olive oil
• pinch Chillies Crushed
• Schwartz Sea Salt and Black Pepper to season
