• 3-4 Beet Root, Yellow Beet Roots diced into small bite sizes
• 1 White Onion, or yellow onion small diced
• Salt and Black Pepper, per taste
• 1/2 tsp Curry Powder
• 2 tbsp Lemon, Lemon Juice
• 1 tsp Mustard Seeds, Optional
• 1/2 Jalapeno, remove seed if you prefer less hot and mince very fine
• 1 tbsp Canola Oil
