SAUSAGE STUFFED TOMATOES - Stefano Faita

Ingredients

• 4 beefsteak tomatoes, medium size
• 1 pack of Stefano classic Italian sausages. meat removed from casings
• 2 tbsp of parsley, finely chopped
• 1/2 tsp thyme, finely chopped
• 1/2 lemon, zested
• 250ml of white wine
• 3 shallots, finely chopped
• 3 garlic cloves
• 2 tbsp of tarragon, finely chopped
• 3 tarragon stems
• ¼ cup Stefano extra virgin olive oil
• Salt and freshly ground pepper
