Caponata

Ingredients

• 1 large Eggplant
• 1/2 cup Olive oil
• 2 tablespoons Olive oil
• 2 1/2 cup Onion sliced
• 1 cup Celery diced
• 2 cups Tomato sauce
• 1/4 cup Red wine vinegar
• 1/2 cup Golden raisins
• 2 tablespoons Capers drained
• 1/2 teaspoon Salt
• 1 dash Pepper
• 12 Black pitted olives slivered
• 1/3 cup Pine nuts
• 1 package Crackers of choice
