Ingredients

  • 1/2 lb pork belly, cut into chunks
  • 1/2 lb cured chorizo sausage, sliced
  • 1/2 lb morcilla (Spanish blood sausage), sliced
  • 1/2 lb beef shank or stew beef, cut into cubes
  • 1/2 lb smoked ham hock or bone-in ham
  • 1 cup dried chickpeas (soaked overnight and drained)
  • 2 medium carrots, peeled and sliced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 large potato, peeled and cut into chunks
  • 1 small leek, cleaned and sliced
  • 1 cup dried white beans (optional, soaked overnight and drained)
  • 1 teaspoon smoked paprika (pimentón)
  • 1 teaspoon ground cumin
  • 2 bay leaves
  • Water 8 cups Enough to cover all ingredients
  • Dry white wine 1 cup Optional for added depth
  • Olive oil 2 tablespoons For sautéing vegetables
