Lemon Cream Pie
This pie is surprisingly easy to make but looks and tastes very impressive. If you cannot find Petit Buerre cookies, you can use graham crackers.
Ingredients
- Peel from one lemon plus 1/2 cup fresh lemon juice
- 4 large egg yolks
- 14 ounces sweetened condensed milk in can or tube
- Cracker Crust
- 3 T. sugar
- 5 T. melted butter
- 1 1/4 cups crumbs from Petit Buerre cookies
- Whipped Cream Topping
- 3/4 cup heavy cream
- 1/4 cup confectioner's sugar
