Scotch Beef Steak and Roasted Red Pepper Pasta Salad with Basil Salsa Verde Recipe - Make it Scotch

Ingredients

• 300g conchiglie pasta
• 140g kalamata olives, halved
• 250g roasted red peppers, drained and roughly chopped
• 400g cherry tomatoes, halved
• 120g rocket
• 2 Scotch Beef sirloin or rump steaks approx. 250g each
• 1 tbsp olive oil
• 30g parmesan shavings
• Salt and pepper to taste
• Basil salsa verde:
• 1 bunch of fresh basil, stalks removed
• 3 tbsps extra virgin olive oil
• 2 garlic cloves, peeled and roughly chopped
• 1 lemon, juice
• 3 anchovies and 1 tbsp of their oil
• 2 tbsp capers, roughly chopped
• 1 tsp dijon mustard
• 1 tbsp red wine vinegar
