Ingredients

• 2 red beets
• 1 onion, peeled and chopped
• 2 cloves garlic, peeled
• 1 tablespoon (15 ml) olive oil
• Salt and pepper
• 2 onions, chopped
• 1 cup (250 ml) chopped cabbage
• 1 1/2 cups (375 ml) chopped carrots
• 1/2 cup (125 ml) chopped celery
• 2 tablespoons (30 ml) butter
• 4 cups (1 litre) turkey broth
• 1 cup (250 ml) potatoes, diced
• 1 shallot, finely chopped
• 1/2 cup (125 ml) mushrooms (oyster, chanterelle ...)
• 2 teaspoons (10 ml) fresh basil, chopped
• 6 tablespoons (90 ml) 15% cream
