• 2 cups loosely packed grated carrots
• 1/2 cup oil
• 3 eggs
• 2 tsp vanilla
• 2 cups all purpose flour
• 1 1/2 cup sugar
• 1 tsp salt

• 1 cup buttermilk (or 1 cup whole milk mixed with 1 tbsp vinegar)
