• ¼ cup olive oil
• 227g double-smoked bacon, chopped
• 454g pork sausage, casings removed
• 112g unsalted butter, divided
• 4 stalks celery, diced
• 4 cloves garlic, minced
• 3 medium carrots, peeled and diced
• 2 large yellow onions, diced
• 1 bunch sage, chopped
• ½ bunch thyme, chopped
• ½ bunch parsley, chopped
• 2 cups chicken stock
• 1 loaf stale sourdough, cut into 1″ cubes and dried (see quote above)
