Creamy Chicken And Wild Rice Soup With Mushrooms

Ingredients

• Wild rice
• 1 cup wild rice I used wild rice blend (Lundberg brand)
• 3 cups water
• Mushrooms
• 6 oz mushrooms sliced, I used cremini
• 1 tablespoon olive oil
• ¼ teaspoon salt
• Chicken
• 1 pound chicken breast skinless boneless, or 2 chicken breasts
• 1 tablespoon Italian seasoning
• ¼ teaspoon pepper
• Vegetables and broth
• 1 sweet potato large, peeled and chopped
• 5 cloves garlic minced
• ½ teaspoon Italian seasoning
• ½ teaspoon paprika
• ½ teaspoon red pepper flakes
• ½ teaspoon salt I used Morton table salt
• 5 cups chicken broth or vegetable broth or water
• 1 cup heavy cream
• fresh thyme
