Creamy Asparagus and Spring Onions with Chicken – New Mexico Farmers' Marketing Association

Ingredients

• 4 chicken breasts or large chicken thighs (bone-in and skin-on)
• 1 pound asparagus spears
• 4 spring onions (a little larger than a golf ball)
• 3 or 4 cloves of local garlic
• 2 tbsp olive oil or local butter
• 1 1/2 cups chicken broth
• 1/2 cup beer (a lighter beer works best in this recipe)
• 1/4 cup heavy cream
• salt and pepper
