  • 2 large yuca (cassava roots, peeled and cut into chunks)
  • 2 medium green plantains (peeled and cut into rounds)
  • 1 medium potato (peeled and cubed)
  • 2 large ears of corn (cut into thirds)
  • 1 medium onion (finely chopped)
  • 3 garlic cloves (minced)
  • 2 roma tomatoes (diced)
  • 1 green bell pepper (diced)
  • 1 small bunch of cilantro (finely chopped)
  • 1 tsp ground cumin
  • 1 tsp achiote (annatto powder (optional, for colour))
  • 1 tbsp salt (adjust to taste)
  • 1 tsp black pepper
  • 8 cups water or beef broth
  • Fresh lime wedges (for serving)
