- Creamed Coconut: 200g block creamed coconut, chopped
- Groundnut Oil: 3 tbsp rapeseed or groundnut oil
- Soft Cheese: 200g tub full-fat soft cheese
- Sugar: 600g sugar
- Egg: 5 large eggs
- Vanilla Extract: 2 tsp vanilla extract
- Plain Flour: 375g plain flour
- Desiccated Coconut: 175g desiccated coconut
- Lime: icing sugar, raspberry lime drizzle (see below), coconut curls and lime zest (both optional) to serve
