Ingredients

  • 2 tablespoons fermented black beans
  • 1½ tablespoons peanut or vegetable oil
  • 2 scallions, white parts only, thinly sliced
  • 2 garlic cloves, minced
  • 2 teaspoons julienned fresh ginger
  • ¼ pound ground pork
  • 1 cup Chicken Stock
  • 2 tablespoons Chinese rice wine or dry sherry
  • 1½ pounds whole uncooked lobster, cut into 12 pieces, or
  • 1½ pounds lobster tails in the shells, each tail cut into
  • thirds (see Note)
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons
  • water
  • 1 teaspoon sesame oil
  • 1 large egg, beaten
  • special equipment
  • Wok or deep 14-inch skillet with lid
