Panettone bread and butter pudding
Made with leftover panettone you might have lingering around after Christmas, this recipe is a great way to treat yourself during the festive season.
Ingredients
- 750 g panettone, slightly stale
- 75 g butter, very soft
- 1 tsp mixed spice
- 1 pinch nutmeg, grated
- 1 clementine, zest only
- 50 g dark chocolate, roughly chopped
- 2 tbsp orange liqueur (optional)
- 200 ml whole milk
- 1 tsp vanilla bean paste
- 3 eggs
- 25 g caster sugar
- 100 ml double cream
- 1 tbsp demerara sugar
