• 3 large onions, chopped
• 1/2 cup hot peppers, diced and seeds removed (about 6)
• 1 cup mild chiles, diced and seeds removed (about 4 )
• 4 cloves garlic, chopped
• 2 cups lemon juice, bottled (see notes)
• 1 tablespoon sea salt
• 1 tablespoon granulated organic cane sugar
• 1 teaspoon pepper
• 1-2 6 ounce cans of tomato paste (optional, for thickening)
