Inspired by cookobook author, Rose Carrarini, this chocolate-orange tart made with creamy ricotta and an almond-flour crust tastes like an oversized cannoli.
Ingredients
- For the tart shell:
- 130 grams (1 cup) all-purpose flour
- 50 grams (½ cup) almond flour
- 66 grams (⅓ cup) white sugar
- ¼ teaspoon table salt
- 6 tablespoons salted butter, cut into ½-inch cubes and chilled
- 1 large egg yolk
- 1 teaspoon vanilla extract
- For the filling:
- 74 grams (6 tablespoons) white sugar
- 2 teaspoons grated orange zest plus 2 tablespoons orange juice (1 orange)
- ¼ teaspoon cinnamon
- 1 ½ cups (12 ounces) whole-milk ricotta
- 1 large egg plus 1 large egg yolk
- 1 ½ ounces semisweet chocolate, chopped
