Thai Chile Poblano aka Thai Chile Rellenos – Karma Sauce Company LLC

Ingredients

• 4 large Poblano peppers, aka chiles
• 2 tbsp finely chopped coriander root
• 1 tbsp finely chopped garlic
• ½ tbsp finely chopped ginger
• 1 small shiitake mushroom, minced
• ½ lb. ground pork (or minced tofu)
• 1-1/2 tbsp fish sauce or soy sauce
• 1 egg
• 1/8 tsp ground pepper
• 2 oz. bean thread noodles
• Egg wash: 2 raw eggs, scrambled in a bowl
• fine corn seasoned with a pinch of salt
• Corn oil for frying
